Apple Crisp with Cinnamon Whipped Cream

It's apple season! Here's how to bake up a delicious Fall treat using tart cooking apples topped with luscious, cinnamon infused whipped cream.

Serve up a tasty dessert this season, a freshly baked apple crisp with a crumbly topping, garnished with a fluffy dollop of cinnamon whipped cream. This recipe yields 8-10 servings of this warm, delicious Fall treat.

Apple Crisp

Ingredients:

  • 9-10 cooking apples, peeled, cored & thickly sliced
  • 1 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup chopped pecans
  • 3 1/4 cups sugar
  • 1 tablespoon lemon juice, freshly squeezed
  • 1/2 cup unsalted butter
  • 3 eggs
  • 1 1/2 teaspoons baking powder
  • 3 cups flour
  • salt to taste

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine apple slices and lemon juice well, set aside once coated.
  3. In a medium bowl, combine cinnamon, nutmeg, pecans and 1/4 cup of sugar until well mixed.
  4. Pour the sugar mixture over the apple slices and mix to coat thoroughly.
  5. In a large bowl, mix together flour, 3 cups of sugar, 1 1/2 teaspoons baking powder and a pinch of salt.
  6. Add the eggs to the flour mixture and mix by hand until well combined, and consistency is crumbly.
  7. Pour the apple slices evenly into a rectangular 9 x 13-inch cake pan.
  8. Cover the apples evenly with the crumbly topping so that the apples are completely covered.
  9. Melt the butter, and then pour it evenly over the crumbly topping.
  10. Bake for 35 minutes or until bubbly and golden brown.

Tart cooking apples, such as the Granny Smith variety, work best when using this recipe. Make sure the apples are fresh and crisp for best results. Red apples are not recommended for this recipe, as they tend to be too sweet, and don't combine well with the sugar.

The pecans in this recipe can be exchanged for walnuts or omitted completely for those who don't like nuts. Other variations of this recipe include adding 1/8 cup of regular or golden raisins along with the apples, or adding 1/8 cup of chopped walnuts or pecans into the crumbly topping before baking.

Cinnamon Whipped Cream

Ingredients:

  • 1 cup whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon of cinnamon

Directions:

  1. In a medium size bowl, combine all ingredients.
  2. Whip ingredients together until desired consistency of stiffness is reached

Serve the apple crisp warm, in plates or bowls with a dollop of cinnamon whipped cream on top. Cinnamon whipped cream can also be used to garnish other desserts, like pecan pie or pumpkin muffins.

Another good way to serve the apple crisp, is a la mode style. Instead of the cinnamon whipped cream, try topping each serving with a generous scoop of vanilla ice cream. No matter how you serve it up, this apple crisp is the perfect Fall dessert.
