Applejack Fritters, Stewed Apple Crisp, Turkish Apple Delight Candy and Apple Puffs can be served all year-round but are especially appropriate and tasty at harvest time.
Autumn brings an abundance of apples in many varieties. Now is the time to prepare sweet ones or tart ones in your gourmet kitchen. These recipes do not call for any particular variety, so it is the cook’s choice.
Applejack Fritters
Ingredients:
6 large apples
1 cup sugar
3 tablespoons applejack
½ teaspoon cinnamon
Beer batter
Confectioner’s sugar
Directions:
Peel and core the apples and slice them into 1/3-inch rings
In a separate bowl combine the sugar, applejack and cinnamon
Macerate the apples in the sugar mixture for one hour
Dip each ring in beer batter, coating it completely
Fry the rings in hot oil (375 degrees) for four minutes, turning several times
Drain the cooked apple rings on paper towels
Sprinkle apples with confectioner’s sugar and serve
Stewed Apple Crisp
Ingredients:
6 large apples
1/3 cup water
8 tablespoons butter
½ cup sugar
½ cup chopped walnuts
½ cup day-old bread crumbs
Directions:
Peel, core and thickly slice the apples
In a skillet combine the water and 2 tablespoons of the butter with the apples
Cover the apples and steam over low heat for fifteen minutes or until soft
Add 1/3 cup of the sugar and rotate the skillet for a few minutes, until all the sugar is dissolved over the apples
Spread the stewed apples in a shallow baking dish
In a bowl combine walnuts, bread crumbs and the rest of the sugar
Cover the apples with the walnut mixture and the rest of the butter
Bake the crisp in a preheated 425 degree oven for thirty minutes
Serve warm with heavy cream or vanilla ice cream.
Turkish Apple Delight Candy
Ingredients:
6 large apples
1/3 cup water
2 tablespoons butter
1 cup sugar
2 tablespoons gelatin
1/3 cup dark rum
1 cup toasted and chopped almonds
1 teaspoon lemon juice
Confectioner’s sugar
Directions:
Peel, core and thickly slice the apples
In a skillet combine the water and butter and apples
Cover the skillet and steam the apples over low heat for fifteen minutes or until soft
In a separate dish, sprinkle the gelatin over the rum to soften for ten minutes
Puree the apples through the fine disk of a food mill into a saucepan
Simmer the puree over moderate heat until it is thick
Stir the gelatin mixture into the puree, remove the pan from heat and stir the mixture until the gelatin is dissolved
Add the almonds and lemon juice
Pour the mixture into a buttered loaf pan (7” by 3/5”) and let it sit overnight
Cut the candy into one-inch squares and roll in confectioner’s sugar
Let the candy dry for 24 hours and coat it again with more confectioners’ sugar
Makes about twenty pieces of candy.
Apple Puffs
Ingredients:
2 large apples
4 tablespoons sugar
½ teaspoon grated lemon rind
¼ cup butter
3 eggs
1½ cups milk
1/3 cup flour
½ teaspoon vanilla
1/8 teaspoon grated nutmeg
Confectioner’s sugar
Directions:
Peel, core and thinly slice the apples
In a large ovenproof skillet, sauté the apple slices, 2 tablespoon sugar, lemon rind and butter for five minutes
In a blender blend the eggs, milk, flour, vanilla, nutmeg and the rest of the sugar
Pour the mixture over the apples
Bake the puff in a hot oven (425 degrees) for ten minutes
Sprinkle confectioner’s sugar over the puff and continue baking for ten more minutes or until the top is golden brown
Whether you prefer your apples fried in beer batter and sprinkled with confectioner’s sugar, served with walnuts and ice cream or pureed with rum, these dishes are bound to please the palate. Why not try all of them?
