Spice up the regular home-style chicken noodle soup recipe with some Mexican chipotle chiles and avocado.

There are several recipes for classic chicken noodle soup that have been evolving since the 12th century when it was first prescribed by a doctor. Help protect the immune system and sooth a cold or flu with a more exciting version of traditional soup. It will support the immune system, repair damaged cells and clear up body aches, to name a few things. The added spices in this dish also will ease congestion and stimulate healthy body function. It's important to remember to eat right with healthy snack recipes and to stay hydrated as much as possible when ill with a cold or flu.

Why Does Chicken Soup Help Illness?

  • Added citrus such as lime or lemon helps boost the immune system with Vitamin C
  • Garlic and onion has a natural decongestant, acts as an antioxidant and destroys free-radicals that damage cells.
  • Chicken broth, rich in fat and hot, provides hydration, soothes the throat and muscles and opens nasal passages.
  • Fresh ginger root shaved into the soup treats coughing, opens nasal passages, reduces fever and body aches. It also aids digestion and gets rid of stomach pain and sore muscles from the flu virus.
  • Vegetables like spinach, scallions and fresh herbs provide Vitamin D which boosts the immune system. Purchase fresh herbs in season and then preserve them for future use with herb butter and cheese.

South-of-the-Border Chicken Soup Recipes

(serves 6)

Ingredients:

  • 5 boneless, skinless chicken thighs, cut in 1/3-inch chunks
  • 2 T extra-virgin olive oil
  • 1 chopped onion
  • 6 garlic cloves, sliced thin
  • 2 canned chipotle chiles in adobo sauce, finely chopped
  • 2 T chipotle adobo sauce from cans
  • 6 cups chicken broth
  • 1/3 cup fresh cilantro, chopped
  • 2 limes
  • Salt and pepper
  • 1 avocado, sliced thin
  • Crush tortilla chips
  • Ginger root, spinach, scallions and additional herbs like parsley; optional
  • Shredded Colby Jack cheese, if desired

Directions:

  1. Heat up the olive oil in a large saucepan on medium heat, then add the onion and garlic. Lower the heat and cook until the onion browns, then put the heat back up to high. Push the onion and garlic to the side, then add the chicken and cook until golden. Add any additional vegetables or herbs to taste. Add the chipotles and sauce.
  2. Add the chicken broth. Continue stirring on low heat for about fifteen minutes, simmering. Skim off any foam with a spoon during this time. Then, add the cilantro, juice of two limes, salt and pepper to taste.
  3. In soup bowls, add a couple avocado slices to each one, then pour in soup. Top with tortilla chips, additional herbs or some shredded Colby Jack cheese.

For a more classic cure a cold chicken noodle soup, forget the spicy chiles and go back to an old faithful recipe.
